Suits quick cooking in a very hot pan.
Remove Steaks from the fridge at least 15 minutes before cooking to allow the meat to come to room temperature. This will enhance their tenderness after cooking.
Always pre-heat the grill or pan before starting to cook the steak.
Pat with kitchen paper to ensure steaks are dry before rubbing with oil on both sides and seasoning with salt and pepper.
Don't over handle the steak when cooking. Try to limit this to turning only once- halfway through cooking. Finally allow the meat to rest for at least 3 minutes after cooking.
Blue - 1 min each side, internal temp 10-29C
Rare - 2.5 min each side, internal temp 30-51C
Med/Rare - 3-4 min each side, internal temp 57-63C
Med - 4 min each side, internal temp 63-68C
Well Done - 6 min each side, internal temp 77C+
