Cooking Instructions

If held frozen, defrost thoroughly before cooking.

About 30 minutes before cooking, remove the meat from its packaging and pat dry with kitchen paper to allow the meat to come to room temperature.

Preheat oven to 230C/Gas 8 for 10 minutes. Then reduce to 180C/Gas 4 allowing 20 minutes per 500g for rare; 26 minutes per 500g for medium; 32 minutes per 500g for a well done roast.

When cooked remove from the oven and place on a chopping board and cover in foil.

Rest for 20 minutes before slicing.
