Cooking Instructions

If held frozen, defrost thoroughly before cooking.

About 30 minutes before cooking, remove the meat from its packaging and pat dry with kitchen paper to allow the beef to come to room temperature.

Pre-heat the oven to 230C/210C fan/Gas 8

Place the beef fat side up on the tray on top of any vegetables.

Place in the centre of the oven and roast for 30 minutes then reduce to the temperature to 108C/160C fan/Gas 4. Continue roasting for 12-15 minutes per 500g for a medium rare roast.

When cooked remove from the oven and place on a chopping board and cover in foil.

Rest for 20 minutes before slicing.

This a guide only, cooking time varies depending on the cut and oven.
