If held frozen, defrost thoroughly before cooking.
About 30 minutes before cooking, remove the meat from its packaging and pat dry with kitchen paper to allow the beef to come to room temperature.
Pre-heat the oven to 200C/190C fan/Gas 6
Heat a tablespoon of vegetable oil in an oven proof dish and brown the olives.
Add stock and veg as required. Cover and place the dish in the oven and cook for 45 minutes, turning the olives halfway through cooking.
